>>22014155 It's just unnecessary, I've tried it both ways and can't tell a difference. The pasta water does a good job thickening it and the cheese flavor is the main thing you taste. It also lets you control exactly how thick or thin you want it and it doesn't cool it down like milk and butter would unless you go the extra step to heat those as well. Also it's just easier and if you are being lazy it's all about saving steps.
