it's really a mixed bag, there's some gems but it's definitely old school french and usually not in a good way compared to contemporary approaches
not to mention that it assumes you're using extremely high quality ingredients like she did which explains the frequent lack of seasoning in recipes like yeah i guess a roast chicken with literally nothing on it would be a lot better if i bought a $40/lb specialty breed but i'm not doing that

exactly, and she doesn't note the exorbitant price and effort put into sourcing the absolute best quality french ingredients possible, probably fuckin leeks from poireaux de créances (~$10/lb in france) and the ever famous ratte du touquet potatoes (up to $10 per potato in france) like yeah sure i'd love to try the intricate flavors of the absolute highest quality produce grown on earth that can only be procured in france or bought specialty in EU/NYC exclusively but i can't and won't

I literally pay more for the cheapest store brand potatoes where I live and they're often already sprouted and bruised kek Ty for introducing me to a new potato cultivar I hadn't heard of I suppose.

I'm in Flanders. I never really paid much attention to potato prices before everything got crazy expensive but I always get a bit pissy about having to pay like €4.50-6 for a 2kg bag of generic store brand potatoes. Maybe they're expensive because of the farmers strikes or whatever. Actually I just looked up the reason and apparently it has something to do with a large part of the supply going to french fry production or something.
