It's considered Finnish, but I'm sure also all of the Scandinavian countries have their version of a cream based fish soup as well.

You should try it, it's delicious. I make mine with hot-smoked salmon, the skin makes a great broth

I made this soup outta leftover ingredients serrano, garlic, shallot, onion, red pepper, adobo chiles, roasted chicken, chicken stock, and pan drippings from chicken.

I want to try making lettuce soup apparently emeril has a good recipe for it. I've been mostly making egg drop (sometimes loaded with tomatoes onions and mushrooms) and broccoli soup (I cheat and use bear creek as a base)

Yeah I like to mix the rest of the egg in there but save the yolk to drop in right as I turn off the heat. That way it only cooks in the heat of the broth as I eat and remains nice and runny.

I need to make a cod and shrimp soup soon. The local asian market often sell salmon heads for cheap so I might add that to the broth. Last soup I had was a lemon and rice soup, Greek style. It was pretty great.
