you open the game and there's like 6 races, 30 classes, 30 different skills per class, and also attributes like strength and agility and you're supposed to know what the best skills and attributes are for your race and class or else your character will miss 90% of attacks and do 5 damage on the attacks they land.
seems like these games give you 10 000 options and 9 000 are noob traps.

All of the games you listed were from the era when games had a comprehensive manual that explained how things worked and offered suggestions and guidance. I, and my friends, played BG as children and figured it out, it’s not that complicated. The only one on your list I wouldn’t recommend to a new player is MotB since it’s a high level expansion pack meant for experienced players (same with BG2, you need BG1 under your belt first) but otherwise I don’t think any of those are that complicated. ToEE can be fairly obtuse I suppose, maybe that ones not a good first pick.

Those games are meant for literate young adults. You should try games that are designed for children like you. Try starting out with Tic-Tac-Toe and Hopscotch.

When the game first released a lot of people's build could not survive Depot A or Tchort was too hard for some builds like crossbow. That is how it got the reputation of hard. Better knowledge of the game and patches changed since then where it's not the same level of difficulty. Still to this day, the game is unforgiving and even if you know what you're doing, most builds can easily die to some piper with a sledgehammer right around the corner.

would be to start out with a simple fighter class to get a feel for the game, just focus on STR CON and some DEX and whatever weapon type seems cool

May I suggest SMT V: Vengeance? It's on PC, Switch, Playstation, etc.
As far as RPGs go, it's a good beginner game because you can run past enemies in the overworld, you can save anywhere, there's monster collecting, and the visuals, soundtrack, and combat are all fantastic.
The character customization gets complex later on, but the game eases you in slowly so you can learn the mechanics before the difficulty goes up.

No of them are beginner friendly. RPG games are the hardest genre to play. Just stick to kid's games like checkers or tic-tac-toe.
Another children's game I think would be perfect for you is a game called "Bop It". It's really easy because it literally tells you what to do.

Mass Effect Trilogy
Tainted Grail: Fall of Avalon
Other than Tainted Grail these games get trashed on this board regularly. Other than Tainted Grail these games go on sale all the time, so you can make your own decision rather than listening to a bunch of miserable faggots.
Turn-based
Warhammer 40K: Rogue Trader (lots of options, but very easy on lower difficulties).
Most Japanese-style RPGS (e.g. Final Fantasy, Dragon Quest, Chrono Trigger). These are usually more story-based and less reliant on challenging combat, but (as some screeching autist will no doubt inform you) that doesn't apply to every-single game.
Probably avoid:
Witcher 1. It has a really weird combat system that a few people really like. Personally it grinds my gears.
Real-time with pause games (old Baldur's Gate, Icewind Dale, Dragon Age: Origins). I'm biased because I don't like this style of combat, but I don't think this would be a good kind of game to "ease into" the RPG genre.
This is 4chan, where everyone and everything sucks, so take what I say and what others say with a pillar of salt.
