>start off fighting cool monsters
>switch to fighting monsters that look, fight, and act like humans, but they're not human, so it's okay to brutally murder them

Why do exorcist manga always go down this path?

This isn't a exorcist manga thing, it's a general thing.

that's just an issue with weekly battle shounen. they start out with some unique and interesting hook, but within about a year to two years tops the weekly grind gets to the mangaka and the path of least resistance ends up winning. good bye uniqueness that made you stand out, hello constant fights with generic humans that make it easier to write
I'm not sure if it's simply because of the stress of a weekly series, or if it's because they're both writing and drawing, and unsurprisingly as mangaka their main love is art and not writing, but it happens all the fucking time. between chapters 50-100 usually

YYH didn't even start like that. It started with doing actual supernatural detective stuff and helping spirits before turning into a battle manga. And the anime just completely skipped over that early stuff.

Nube still has non-humanoid stuff later on and also never really turns into a battle manga.

Mindless monsters as the enemy gets boring. It's why zombie media ends up with human enemies the longer it goes on.
