How do you live a good life if you’re chronically exhausted? the only time I feel well enough to go out for fun or start a creative project is when I’m unemployed unable to afford it.

first find out why you're chronically exhausted.
One of the major reasons why people feel this way is stress. So you need to calm your nervous system. Meditation, emotional freedom technique etc.
A common cause is modern life has so much stimulation. Maybe don't be always online.
And get moving. The more you sit, the more tired you will feel.

Meh. There's always enough energy when you really need it. In the last 2 weeks or so I've been forced to "lock in" and do a lot more work than usual and I completely gave up on limiting the coffee in the process
I don't recommend doing it because now I still have to work a lot and my caffeine dependency is driving me into cardiac arrest territory but these weeks definitely taught me something about energy. The body is more than capable of constantly focusing on both during mental and physical exertion, you just have to somehow remove the mental resistance from the equation

Get a job opposite your passions. If you like brainy sit-down stuff like art or coding, get a physical job to preserve your mental energy.
If you like physical stuff like hiking or weight lifting, get a sit-down brainy job to preserve your physical energy.
Can't spend 8 hours frying your brain at a desk job and expect to have any brain left for your intellectual hobbies.

I do dull analytics work that'll probably be replaced by AI in a few years, so I doodle and post anonymously and enjoy that. I'm also getting caught up on "movies I've wanted to watch since forever" when everyone's asleep.

I don't know much about type 1 diabetes, but I know that glucose levels strongly effect energy levels and brain function, something that ppl with diabetes struggle with.

You probably have poor sleep and a fucked metabolism.
Fixable by changing when and what you eat.
Eat NOTHING after 6pm. Don't eat carbs; bread, wheat, chips, potatoes, pasta etc.
