I have managed to get a wasp queen to visit almost daily for sugar water. I guess she is building a nest somewhere, but could I somehow entice her to start building in a provided box? Maybe with building materials? I want a portable wasp nest I could mount on a stick.

For what purpose? If it's to use as a weapon, it's equally likely the wasps will turn on you. Possibly even before you can swing it at anyone.

Enjoy your pests. I put out meat in summer and no mosquito dares coming near. Plus it's funny watching the younger ones cut too much and only getting a few cm off the ground before they land and trim a bit off.
