>>22052922 What this anon said, basically I'd just slice the vegetables into chunks, and put them on skewers. You can also do mushrooms, peppers, bell peppers, zucchini, eggplant, and corn cobs.
>>22052910 big portabello mushrooms. are you vegan or just vegetarian? stuff the caps with good nuts like chopped cashews or walnuts, blue cheese or some other cheese you like if not vegan, sauteed jalapenos, caramelized onions, rosemary, thyme etc. or do a caprese mushroom with moz, tomato, basil. some of the vegan moz is okay. you can also marinate the portabellos like meat but dont marinate too long. a little olive oil and balsamic vinegar goes a long way with mushrooms. you can also do stuffed poblanos or anaheim peppers with the same stuff, or just cheese.
