Have you tried different brands? Some are better than others. I buy this one where they put semolina starch between the sheets so they don't stick to each other, I mean you have to be a little careful.

Yes, it’s me, the stomach is pretty fine now but it gets fucked up by coffee (I had to abandon it) and I have some residual gut problems.
I’ve lost all the joy associated with making and eating food, but at least I have some good memories…

Long story short: I used to drink coffee 3-4 times every day just 3 years ago, espresso and moka, then suddenly I started having problems and strange tensions and spasms in the esophagus which became worse with the years but were nothing serious like acid reflux or an ulcer so I switched to pour over which was easier on the stomach.
I studied to become a coffee roaster meanwhile because I was passionate about it and wanted it to become my job, spent like 1500€ in training and also coffee equipment and then I had stomach surgery to revert the first surgery I had 8 years ago. Basically almost nothing changed and now I don’t have the anti reflux device keeping the LES in my stomach closed mechanically anymore, so if I fuck up my stomach I have no protection so each time I drink a cup, even 1 weekly, I have anxiety as soon as I feel any symptom. It’s not worth the stress living like this.
Too bad I have problems with food too, let’s stop complaining here.

If so why did you stop making and enjoying your amazing pastries?
Seems like enjoying delicacies like these once in a while would be just right to lift your spirit up again when feeling down.
