I get most ranches come with the infrastructure for milking already but it still happens now and again. Usually from a new farmhand not getting their due diligence, or just upsetting the girls enough they do it on purpose.
Anyways you will have to get about 5 dozen more silos for a girl of that size and thickness, yes she will insist you need to help her with it daily, no you do not have to manually attach the tubes or cups and you can just be there for 'moral support' (red: sexual gratification), and no she cannot hold back from lactation for more than 8 hours or so. If you think you have just enough storage for all the titmilk for a given timeframe then try to double it because those udders of hers are absolutely going to overflow it at some point and they always seem to pump out more than they should be able to keep in, regardless of how big they are.

Keeping the silos spaced apart to be closer to where her breasts are during milking is also recommended. And if (when) she inevitably starts going up cup sizes, prepare for the milk output to increase exponentially.

Holst milk is miraculous in a lot of ways. It doesn't spoil for months on end. It's nutritious, healthy but can also be used in a variety of delicious desserts. A giant holst is a blessing on a land if kept well, or apocalyptic if not.

There is an addictive chemical in holst milk that quickly degenerates on exposure to air. What this means is you should not, under any circumstance, let one breastfeed a farmhand. They can become hopelessly dependant on the holstaur, which can in turn spur her to become motherly or generally protective and nurturing.

It's not a permanent change for either party, but it can reduce milk output UNLESS you know what you're doing. Some holst owners reckon that you can boost milk quality by doing lewd things with the cow. I've seen others claim that, in a group of holsts, that behaviour can drive competitiveness between the cows which in turn boosts output.

All of this can apply to the minotaurs, an active, tanned species of cow girl related to holstaurs. But, those are a FAR harder species of giant monster girl to look after.

You can befriend a wild one with enough kegs of beer, knowledge of sport (jousting, football, whatever) and being 'chill'. If you fight one, she will just interpret it as wanting to wrestle, which is a death sentence. You might get eaten if she's hungry, so bring food, and mention you have more food back at your farm. They adore sports massages too.

Alternatively, you can introduce a young future farmhand to a young minotaur and they may become 'childhood friends'. This is ideal, but requires a reasonably friendly mom minotaur to already be in the area.

Domesticated minotaur aren't exactly easy to work with either. They are loud. They can get aggressive if they see red. They are taller and muscles are larger, so their bodies run hotter and sweatier. Getting trapped beneath one's tit or ass can cause heatstroke or drowning if you aren't careful. They LOVE to tease farmhands they have a crush on - literally crushing them under hoof, butt, armpit or boob. Popping them in their mouths and milking them with long cow licks.
On the other hand, they are easy to milk when they are in the mood for it. They fold like napkins. The pleasure and lewdness of someone they like milking makes them mewl and moo softly (still deafening up close).

They are big softies on the inside. You'll love spending time with one, nestled between her boobs or laying on her stomach. Eventually, you'll feel confident and comfortable enough to tease her back.
Oh, and the melee milk is pretty cool too.

This talk is reminding me of an alternate take on this game some guy on DA did, Bad Status Dragon Rider. In that game the rider shrinks and the dragon becomes a girl, so it ends up being a normal, generic JRPG with occasional, rare size bits.
I instead thought about a character more like what you described, a hero with legendary durability to the point of invincibility- but not curse resistant, so he winds out being shrunken, and a goblin who had been following/stalking him because she was a fan winds up "rescuing" him- genuinely well-meaning, but bumbling, so he's forced to try to train her to be an adventurer while other monster girls try to take him for their own purposes.

I like BSDR, even though koikatsu isn't for everyone. The hag evil elf and the fox girl plus some others have some great scenes. The general vibe, atmosphere and tone of the game is a nice change.
I like your scenario as well.
I think MG stuff is best when monster girls are already predisposed to be aggressive, affectionate and possesive towards humans, and so when the humans are shrank that behaviour is turned up to 11.

It's simple really. Monster girls want men. The human kingdom has men. Use the oni system and send a few dozen men to each of the neighbouring monster girl factions a year. Call it tribute, a mission, an exchange, whatever.
If they want the men fun-size, then you can just drive a harder bargain for it as you need the pixies/elves (who will also ask for a share at some point).
Besides, if they have limited supply they're going to take better care of and make better use of their tiny guests.
In return, you can benefit from what each monster girl is good at. Get some elven mages, some dwarf smiths, some ogre/oni muscle,etc.
The tinies can remain there for longer if they want (maybe not with ogres, but you'll get some ass-loving masochists).

I know danuki are scheming bastard raccoon girls, but they know a thing or two about getting good outcomes. It's just efficient use of resource (tinies).
