Genuinely, what more do you need?
For millions of years our ancestors ate only meat, fish, fruit and berries.
Br*ad was invented only ~15K years ago, nowhere near enough time to completely adapt it into our natural diet.

This is an incredibly regressive way of thinking. If you're going to make these claims about food, why aren't you making them about other things that meet modern human needs? Healthcare, technology, shelter, food abundance, etc etc. Our ancestors survived without those too, but as a consequence there were very few of them and they spend almost every waking moment in survival mode. Feel free to advocate for this, but also know that if there a true return to this mode of development that theres a one in a million chance that you'd be among the surviving population.

The harm to our biology comes from cheating the built-in reward system via excess.
Excessive healthcare and shelter leads to the immune system becoming atrophied and easily succumbing to the one strong germ or virus that does get through.
Excessive convenience and easy entertainment fry the dopamine receptors and lead to depression.
Hence why in addition to consuming almost no carbs I dress light for cold weather to build immunity and never distract myself with music or anything while commuting so I can have time for introspection. It might not sound like a lot, but keep in mind that I commute at least twice a day every day.

Let's be real, you're not a paleolithic hunter or even a medieval peasant working the fields. Your desk job requires less energy than that of a berry picker, so there is really no need to stuff yourself with glucose for breakfast lunch and dinner every day in the modern age.

That's a pretty respectable aspiration.
For your case I'd probably recommend something like carbs (rice/pasta/buckwheat/etc) + lean meat (chicken/turkey/white fish).
Honestly you can have anything as long as you aren't chowing down carbs and fat together, that combo is always an overkill almsot no matter what you do.

So far i've been working with eggs, lean meat, fruits and vegetables.
I reaaaaally dislike grains overall.
Avoid rice or beans like the plague, but pasta sounds nice.
First and foremost i am preparing my overall physic for swimming, running, lifting and etc you need for any work in the militar police, then i will prepare for the proper firefighter focused one.
Not easy at all, eating good quality food will pull me a long way in this too.
Besides pasta, what other carbs that arent related to grains could i get?

It's not about dying, it's about how often and how hard you are incapacitated by sickness when it inevitably comes. Because I intentionally subject my body to cold, thus momentarily impairing my immune system and letting some germs/viruses leak through for my cells to fight and train against, I don't have to worry about shit like covid knocking me down.
Not even once got vaxxed or called in sick in the past 10 years, facts speak for themselves.
