How the fuck is this legal? Microsoft is forcing me to update Windows against my will. I can't pause or stop this update, I already have updates paused but this one is getting forced down my throat.

Look, you have three options here.
1. Switch to Mint or Bazzite or something
2. Use some script that removes or inhibits Windows Update
3. Spread those cheeks, bitch
Personally I dual boot and my Windows install is as stripped-back as possible so it never updates.

I do, and it seems that wintoddlers don't because things like coding, self-hosting, embedding engineering feel like they were built around Linux. UX of KDE is miles ahead of Windows.
I dunno what wintoddlers are doing with their computers, seems like only filling spreadsheets in Excel. Someone would say "muh photoshop, sony vegas etc" but I newer saw /g/tards posting their professional image or video works.

I blame normalfag phone users for everything including this. They are so used to the "convenience" of their OS doing all the deciding and thinking for them that Microslop shifted their Windows design philosophy from user controller to MS controlled starting with 10.
When computers were just for nerds it would have been unthinkable that they can just force an update or changes you don't want but since the masses started perceiving that as the norm companies can do whatever they want and a minority of angry people is not gonna matter.
Just move to Linux unless you are SURE you can't get the software you need to use to run on it via Wine/Proton. Most stuff just works now.

Gubberment got mad there are so many unpatched Windows systems are out there. It's okay for the three letter agencies and Mossad to hack any Windows system, but not acceptable that there are systems with unpatched exploits used by foreign intelligence.
In my opinion, the default should have been to only force critical security update and to leave everything else up to the user.

I'm using the newest CSP version and Photoshop 2021 with practically zero real issues on my computer. I can use MS Office too, but I prefer LibreOffice.

This may come as a shock, but a lot of us are programmers. It's actually really annoying setting up Windows to work for multiple different languages unless you love Visual Studio and don't mind a billion installers. Also, needing an gimped embedded Linux to use Docker. Most of the time work I've seen uses Google's Office alternatives or I can just use LibreOffice (OpenOffice might be a nice alternative). If I really need Office proper, Microsoft has an online version. Photoshop and CSD can be replaced by Photopea if you really want Photoshop ergos or something like Krita (or even Gimp). Basically you just hate change, but unfortunately for you Microsoft products are not designed for people like you.

The building you're living on was probably made with Windows. All the software that engineering companies use runs on Windows only. (There are free alternatives but most companies would rather die than use freeware)
