I have a PPC Mac Mini 2005 sitting right here next to me. I used Macs until Jobs died. Again, Apple lost it's Mojo when he went.

I stuck with snow leopard until everything like firefox dropped support. My Mac store, to their credit, never dropped support for it that entire time.

It's been almost a decade since I used macOS and recently I grabbed a mac mini M4 with macOS "that ho".
I don't like how much radius the corners have, sometimes I fail to grab on corners
A lot of things haven't fundamentally changed, but some "advanced settings" I remember being there are no longer, or at least they have moved around a lot
I notice more buggy shit (some widgets not working well), and also because I'm not using an amazing external monitor with a 5k resolution or something, I have to go and use third party software to fix scaling and resolution issues (and there's only one option that looks ok). I feel like I had less trouble back when I was just using a 1080p monitor back in those days. Except for font smoothing, but I turned that off and it looks even worse now.
I despise the glass shit and I noticed that if you disable transparency effects, the controls look all sorts of fucking weird on the light theme. Like it wasn't in consideration. I understand this from linux but I thought I had a polished product here. Also I think the top panel being fully transparent is just ugly. I liked it when there was at least some background at least.
At least the editing software I use runs considerably than on my beefier PC, I guess because there's a lot of software that uses metal or whatever the fuck.

Snow Leopard came out at a time when Apple at least tried to innovate in the computer space, the only valid reason use a Mac now is because the program you want to use only works on Mac.

All I remember from Mojave is they finally finished turning it into a walled garden with signed apps. Snow leopard and before it was marketed as unix with a good user experience. But the more popular it became the more and more they walled everything off to protect the droning masses of stupid users.
