I'd aim for a 4070/5070 , You will be cpu bottlenecked, but it doesn't really matter since ultimately you're going to be cpu bottlenecked in most games to some extent, but at least if you buy the something around that tier, you will be able to run games more modern games at higher detail settings.

x99 is still a pretty ok platform, you can buy really cheap server xeons on aliexpress, some of which are unlocked.
