I've read about hinin in Edo Japan. Oddly enough they had the same standard of living as the average peasant, looked the same, and the only difference between them and the average peasant was that they did jobs that the majority of people weren't allowed to do. Things like tanning leather, being butchers, hunting, etc. they were also involved with underground crime sometimes They actually had more liberties than the average peasant despite being technically subhuman. For instance they were allowed to go into any town to trade, use prostitutes, and were given the same rates as anyone else, while any Japanese of any rank weren't allowed to visit their hamlets without official approval.
