As for the armor, textile can definitely stop a slash, the Aztec design was effectively a gambeson

The Conquistadors won by forming alliances with native tribes who hated the Aztecs. Most of the fighting were done by the natives vs natives. Contextually the aztecs were being attacked by giants, ghosts, lighting throwing wizards, thousands of them were getting sick and falling down dead, they had no idea how to kill the giant flying lighting throwing dog, arrows didn't really seem to work.

Tactically, the aztecs lacked anti cavalry weapons, and kind of metal armor, even if if were one group of spanish fighting another with native weapons, low poundage bows weren't going to work, a spear is not a pike, palisades will not stop an arquebus. nowhere to run, hide, can't win with a direct assault.

Basically none of them had full armor, anon. Cortez was fielding an army of adventurers, not a force of hardened regular infantry.

Even then, leg armor wasn't very common among regular Infantry to begin with, a d any they had was likely discarded by anyone who wasn't mounted, because leg armor sucks when you're marching on a good day, a d would be murderously tiring to deal with in that environment. You'd need to substantially up your water intake just to keep pace, and it WILL tire you the fuck out, especially when you're, say, trying to get the fuck away from tenochitlan after shit went south.

If you want a good book about what the experience was like for the Spanish read "Discovery and Conquest of Mexico 1517-1521".
The common narrative, espoused by poltards and the like, that the Spanish came in like gods and started destroying everyone with ease is far from the truth. They only got through the whole ordeal by the skin of their teeth, and had things gone slightly different, and had they been slightly less lucky, they would have all perished and we'd be living in an alternate timeline.
