I choose to also headcanon that she was a miracle baby that was born prematurely, which further stunted her growth. Discord's chaos is the manipulation of relationships that constitute reality itself, including those from which our perception of time emerges. My headcanon then is that the Princesses with the original Elements of Harmony defeated Discord by reimposing cosmic regularity back upon a universe trapped in his metaphysical flux through the power of the Elements and their stewardship of the Sun and Moon. They basically reinvented time, repairing whatever damage their universe had undergone. This is why Equestria is so weird and full of magic. It wasn't like that before Discord, not competely.

If you're a seasons 1-4 Chad purist like me, then this interpretation also reinforces the quasi-divine status that Princess Celestia and Princess Luna seemed to possess in the show's early years. Rather than merely governing celestial bodies, they become genuine solar and lunar deities whose greatest achievement was not raising the Sun and Moon, but creating/restoring the conditions under which temporal order could exist and Equestria could continue. By their establishing of recurring cosmic cycles, they created the conditions under which time could once again be perceived and experienced throughout Equestria. Discord, naturally, despised this, because the sisters' celestial cycles represent the greatest joke ever played on chaos itself: they convinced the universe that it makes sense.

The Pie family don't follow the doctrine of Celestia/Harmony. They instead worship an old pagan earth pony god. Holder specifically with Holder's Boulder being a religious site, which is why Limestone is protective over it. The influence of Holder is also why Pinkie's family are drab colors compared to most and any pony colored similarly to them like Octavia have ancestry linked to Holder worship. Pinkie doesn't follow that rule because she's a weird mix of old god blessing and chosen by the elements of harmony. That mix is also responsible for her "Pinkie Sense" and other strange abilities.

They also don't have to pay property taxes since the rock farm counts as a place of worship.
