just found out oil isn't really made out of dinosaurs. Why did they lie to us?

if you choose any fixed state that is against entropy (entropy wants to return things to the neutral superposition).
So you will always have to to some extent defend a state against its opposite, so the destructive interference doesn't return you to neutrality.
there exists an alternate world where oil is genuinely made of ammonites and diplodoci and trees. it is no less real. just by researching you force your belief (bayesian) to manifest a particular observation. like "fine if you force me to choose here it is".
what am I saying?
that noone lied. it's just that the universe is inherently messy. and if you hold on to any one truth or value, which is fine to do, you will come into conflict with the opposite.

also does it matter?
say all science is false and all history too. so what?
