Well, the experience of building them alone is a huge appeal. Properly taking your time and being meticulous can be very zen. And, they tend to be REALLY economical when you compare them to figures of similar scale and detail. Kind of a DIY action figure with really good posability.

I have a shelf I keep my gunpla on, every once in a while I take them all down and redo the poses to make a new 'scene'. It's just for fun, really- like collecting anything else.
