If you're thinking about Switzerland and France, you can always fly into Geneva and do Annecy, Chambery, Chamonix and take the bus over from Chamonix to the Aosta Valley in Italy for a day and do the castles. The Alps are really laid back and safe. If you're into skiing, do it in the winter. Chamonix is cheap by US standards. You can get a nice Airbnb with a balcony and a view for $100/night. Lift tickets are $65.

Rhine and the Moselle are beyond awesome especially in nicer weather. You can get the rail pass for Germany and head over to Koblenz from Frankfurt. Koblenz is a great little city with a nice area where the two rivers meet with a great outdoor beer garden and food places. There are some old ass castles and fortifications and a good art museum to check out. The clock in the old town is also a good tourist site along with the old churches that are an atmospheric walk. There are loads of castles you can see from the train. The pass also includes a ferry that runs along the rivers there so you can get a pretty good close up of some of the castles. Some of the smaller towns have an interesting mix of accomodation and have all the German fairytale like look that is pretty fun. The Mosell is also a major wine producing region for Reisling. During the summer there are a lot of festivals. You can tour some of the wineries as well. If you have not seen the old TLC series Great Castles of Europe, you should check it out as it is pretty much still like that. Should on youtube somewhere.

For Thailand if she is not into the crazy cities, Fly into Phuket and get straight over to Ko Lanta. It is chilled out and somewhat clean. I honeymooned there with the Mrs. We loved it. Rented scooters and drove around the island, beach hopped, and visited a bunch of the small villages for a stroll. Went snorkeling down some of the smaller Andaman Islands where the water is crystal clear and as warm as bath water amongst all the Karst formations. You can then head back to Phuket and stay in Old Town away from the madness Patong. The Old Town area is straight up instagram with cafes, chocolate, and trinket crap along with places to pose and take pics. Was much more centred around couples compared to the other parts of the island.

You may also want to check out and see if there are any festivals or events going on there when you go as they always seem to be doing random things. Fireworks festivals, Beach Festivals, etc.

Roadtrip wise down the Oregon and California coast is great. Some of the most beautiful scenery, some comfy little guest houses, and loads of quiet beaches to stroll around. NA wise I would also recommend the Rockies from Banff all the way to Jasper and then further north into BC. Jawdropping. Just bring mosquito repelent for the inevitable post dinner late evening romantic walk.
