Maxine's motivations are, to me, less specifically interpretable and more contingent on your broad interpretation of what the film appears to be about. Is she some kind of repressed dyke who actually likes Cameron Diaz's character? Or is she strictly unscrupulous and selfish? It doesn't seem to be exactly either.

In film, there are internal and external characters, ones that are broadly representative of the internal experience of the author and, by extension, us as sympathetic audiences, and those that represent external figures that influence the experience of the author. Maxine is an other. The Cameron Diaz or John Cusack characters are both transparent and impotent. They want a lot, they are very clear about what they want, and they (mostly) try desperately and fail to achieve it. Maxine is the opposite.

Personally, I think the ambiguity of her motivations and general interiority are a comment, conscious or not of Kaufman's, on his perception of the shiksa girls he dates. He's an obsessive neurotic jew who worries about everything and can't stop telling people about it, and he's attracted to gentile women who are the opposite and he can't ever understand why they're actually like that or why they do the things they do. But, the ambiguity is leveraged, which is why it's such great characterisation.
