Ideally in release order, but I guess you can skip metal gear (not solid) 1 and 2 since there's a plot summary for them in mgs1 (and that's kind of a retread of mg2 anyway)
Mgs3 is also a potential entry point, it works well as a standalone story and it's the first one I played, but you'll enjoy it way more if you've played the previous games already

With master collection vol2 coming soon(?) you'll be able to play them all on PC, which is great. If you have a PS3 lying around they're all available on that too.
