Trials and some dungeons that have mechanics that require players, but these usually have normal difficulty that's pretty easy to pug using the group finder unless you really REALLY want to avoid socialization completely.
You can technically play PvP solo while following a zerg or going off by yourself to fight other players but it's a lot more involved and difficult to get into.

The new leadership is on its way to unfuck subclassing by adding class mastery abilities which should make running pure classes meta again, the new dragonknight rework is one of the best changes they've made in years and pure DK is self sustainable for DPS now.

What should I know before trying to get into ESO?
I made it to level 15 a while ago, and the combat just feels floaty and awkward. I played a Sorcerer with Dual swords, and a Bow.

Should I even try? I'm mostly just trying to find a good MMO to play and connect with people through. I'm a big fan of the Elder Scrolls series, but always just sort of bounced off of this game after a few hours.

I actually really enjoy the typical tab targeting hotkey combat. I think it's fun to play around cast times, cooldowns, and resource management. It really puts the RPG in the MMO while not having everything be turn based.

TERA and RaiderZ did combat well. Black Desert would be up there, too, if attacks were synced with their animations, if effects were clearly visible instead of borderline invisible, if the red circles actually worked consistently, if bosses were fun, and if all enemies weren't gear-checking punching bags. In RaiderZ you could fight bosses naked because every attack was avoidable. TERA in its prime had masterfully crafted boss encounters where one could truly show off their competences. Every other garbage ass piece of shit MMO out there makes something like that completely impossible with their homing missiles and telekinetic melee attacks. There may be not a single good or alive MMO with good combat but that's another topic entirely.

I did the same thing. Thrice. I'm not counting the deletions because of minor appearance tweaks after creation. I really deleted characters with full research, bag slots, skyshards, rare motif/recipe knowledge, etc over things like eye color and ear size. Now I am truly done. I mastered that part of the game. Yeah that was my impression. The rework is more than a year away and the class masteries for Necro don't seem that great (I could be wrong though). I guess I will just ignore my Necro for now. Sad, I quite like the aesthetic of the class.

Yeah, Zenimax announced last week that ESO-hub is holding a housing screenshot contest and got Bethesda to give the crown rewards for the winners. I'm going for it in hopes of winning as I have the talent and a housing build that fits the theme.
