Do any of the class stories have pay off for a Neutral play through? Or am I just screwing myself over by not railroading all my decisions into either Dark or Light?
For example, I'm a Jedi Consular who just finished Chapter 1. I shielded all the masters, because that was my ultimate objective, but chose mostly Dark actions during the quests along the way.

bodyguard is sturdy and has multiple self-shields and knockback immunities, and it also has the absolute easiest healing rotation of all 3 healers, both because it's a sturdy defensive class and because your ability cooldowns and heat management are very straightfoward.
op dies easily since they have less defensives, but I personally find it to be a bit more fun to play than merc. numbers wise, they're similar to each other in healing output and off-healing so it really comes down to whether you want a sturdy class with a suite of strong defensive that is also the easiest, or stealth.
Why does the republic side feel like an afterthought story wise in post vanilla expansions? It feels less fleshed out compared to the Imperial side, more specifically the Sith Warrior.

The first reason is that it's one of the only stories where dark side truly makes sense, which is ironic because you will often see people say dark side consular doesn't make sense. You're outright told that if you use the shielding technique, you are using your own vitality to replace the target of the plague. It's not some magical shield that appears out of nowhere, it saps your vitality as the power source. You are weaker. So a ruthless and calculating person would not use the shielding technique, and would instead kill the infected masters in order to preserve their strength going forward and ensure they are strong enough to kill the plaguemaster. If you lose all your strength using the technique, then when you finally confront the plaguemaster, he just kills you since you're weak and everything is for nothing and everyone dies anyway. The best dark side choices are the ones that actually make sense and a person might reasonably do because there is a benefit.
The second reason is they're stuck with you. One of the things I don't like about dark side trooper and dark side smuggler is that at some point, given the things you do, they would just tell you to fuck off. DS trooper would get courtmarshalled and ds smuggler would stop getting contracts with some of the shit you pull off. But they can't tell the only person who knows the shielding technique to fuck off, they're stuck with you. There is a plot reason for your dark side actions, and there is plot protection from consequences for your dark side options. Which are not things that exist for every story.
But enough about dark side. The consular story played normally is also good, because it's the story that is about the things jedi do for thousands of years in between galactic crisis. Jedi keep the peace, the mediate conflicts, and they are diplomats. Consular is settling in for a realistic jedi story and that's awesome.

Palpatine is a great villain. The way he manipulates Anakin from day 1 and preys on his insecurities was well done, and they even explain the Jedi's incompetence since Palpatine was putting effort into clouding their minds with the force.
There are parts of the prequels that are silly, but the Trade Federation's blockade of Naboo all the way to Anakin fighting Obi-wan on Mustafar make sense and I rarely had to outright say "that doesn't make sense" like I've been doing several times with disney's shows/movies.
People generalize and exaggerate on this topic a lot since hating disney is en vogue for star wars fans, but there genuinely are writing errors in disney's work that are not present in prior star wars stuff. Lucas isn't perfect and he made his own silly decisions, but never, ever, did one of Lucas's mistakes feel like they came from him just not giving a shit. They were matters of taste, not lack of care. Meanwhile disney has shown on several occasions already that they don't care about making things make sense, they just want scenes. Stormtrooper jetpacks, hyperspace ramming, the sith trooper praetorian guard fighting style, Sabine's force abilities, and several things in the acolyte regarding how the force works or the history of the jedi all come to mind as things that disney just wants to make a cool scene and doesn't care that it doesn't make sense or actually contradicts previous worldbuilding.
