PSX. Saturn version has extra content, but it's a shoddier port. The garden and Maria aren't that great, anyway.
PSP version has a much less entertaining dub, but there's not really that many voiced lines in the game. I just default to the original because of the dub, and it'll run on just about anything.

Even though the Saturn version has some extra content, it's much worse on a technical level (yes, there's a hack that makes it a bit less shit, but it's still not perfect)
Play the PS1 version, it can even be emulated on any toaster

PSX overall, but fightable/playable Maria is worth taking a look at the Sat/PSP versions over. You were supposed to fight her in the original (twice apparently, a second phase for a bad ending) but they ran out of time and they sort of approximate the first fight in later versions.

The original overall, but the Maria battle is worth taking a look at other versions over: Alucard was supposed to be able to fight Maria in the original (plus a bad-ending second phase) but the developers ran out of time and the first fight is approximated in later versions.

I hear that the original version, initially released in the year of our lord 1997 for the Sony PlayStation video game home console, is the ideal version, were it not for the lack of an additional escapade that merely takes the form of a non-playable character. Perhaps a decompilation will resolve this outstanding issue?
