Been playing these games again recently. I beat all of them when I was a teenager back in like 2004, but man I'd forgotten how slow the story is.
Anyway, let's talk about .hack.

I finished GU recently and I have no fucking idea what was going through CC2's minds with how they formatted those games. Why is the mid-game for each volume a tournament and in-between the matches is just a character telling you that we need to go to this grind spot they found to get ready for the matches? Also them throwing the same required side quests at you to unlock all the reward givers instead of just keeping them permanently unlocked after doing them in vol 1.
Also an unrelated complaint, but after vol 1 you're never really replying to emails unless they're greeting card emails. Makes offline interactions with party members lamer.

Same issue they had with IMOQ - Bandai demanded that the games be split up into multiple volumes for some reason so CC2 filled them with retarded time wasting shit in order to tide people over between releases.
Each volume of IMOQ has maybe 10 hours of story content but you were expected to pay $50 for each of them. It's just the classic Bandai squeeze.

IMOQ didn't really have much time wasting outside of virus core farming, the story was always going from one place to the next with a sense of urgency. The party member dungeons were all optional except for a Piros and Mia/Elk dungeon here and there if I remember right and the Mia stuff was basically important to the plot anyway because of the Macha connection. It's absolutely nothing like GU making you do grinding sessions or Gaspar emailing you and making you do some dumb quest with him.

I attempted to start up Infection recently, but am getting filtered by the early game.
I struggled through the solo dungeon Mia makes you go through, and now I can't beat this duo dungeon with Elk. I don't remember having trouble at all back in the day

You just need to grind a little, sell shit, and stockpile recovery items. It's not like modern RPGs where you can get through 99% of the game without items, you need to be using items in IMOQ.
Get a party together and go completely clear out some fields at or slightly above your level to get some XP and shit to sell.

Not really. SIGN is probably the most relevant but it's also like eight episodes of plot stretched across a full 27 episode series. Legend of the Twilight Bracelet is non-canon (the manga is the canon in this case). Roots has weirdly disparate characterizations for half the cast so I consider it only semi-canon. Liminality isn't required viewing unless you like watching teenage girls typing and hanging out with ojisans (it's kinda relevant but you can glean everything from the IMOQ games anyway).

I've tried playing the original games a bunch of times over the years and I always kinda burn out around Outbreak. The amount of stupid timewasting shit thrown into normal battles always makes me want to stop playing.
