Something fun I can play on the subway without worrying too much about grinding or keeping up, I would prefer to just focus on the story

Blue Archive, really good story (at least in my opinion) and extremely easy/F2P friendly. Only reason to grind is for boss raids which don't matter to the story at all. There's just one part of the story that requires you to be a high enough level to clear it, and you'll know when that is, but after that it's smooth sailing.
