For me Yuko was the xxx in Holic and it's not the same without her.

Don't worry, Rei's been going for 12 years (with like 8 year hiatus) with only 72 chapters to show for it and it's 100% worthless (for comparison, original manga was finished in 8 years and had 207 chapters, many of which weren't 14 pages long). You're not missing out much by skipping it even if the last few volumes of original manga already ruined everything that was good about the series with timeskip galore.

I don't know about the sequel manga, but I feel like Watanuki being a shop owner is an interesting premise and CLAMP didn't do enough with it.

Because they wasted its potential by going timeskip route.
Seriously, if they wanted to end Tsubasa with Yuuko's death then it's fine for Tsubasa, but there was no need to place Holic in a spot where too much time has passed, several characters NEVER appear on the panels ever again outside of meme dreams, Watanuki and Doumeki repeat the same meaningless course of actions with ZERO progress and the sequel takes place between third and fourth timeskip so readers already know this entire thing is 100% filler.
Rei should've started with the chapter where Watanuki takes over the shop and starts from the basics of dimensional magic and wish-granting. No timeskips, show the reader his first steps as shop owner (with every mistake and success) and use Holic characters to develop his character from there - the flow of time will do its own thing and readers will experience Watanuki's growth naturally (that's how original manga worked), not through "lmao N years have passed and a bunch of important stuff has happened off-screen while we show you non-important stuff".
