I don't normally season my brine, so once their good and brone I'm just gonna sizzle them up on a grillpan for that nice restaurant style cross-hatching. I will get the brine going now but it won't be ready for many hours

Cheaper than chicken for me too. I like them in a cast iron, seared, then finished in oven surrounded by veggies. Also, cut into cubes, fried in pan, add veggies and rice and your sauce of choice. I make a sauce (idk what it is called) with soy sauce, oyster sauce, mirin, ginger, and some garlic that goes really well with it.
