You can tell when someone doesn't actually know how to cook when they buy a piece of meat like a duck just for the sole purpose of making stock. A real cook would first make a roast then use the left-over drippings and bones as a stock for another dish. The dish you're making doesn't come close to anything that you can call a curry. This is another episode of a white person buying exotic ingredients and just for the sole purpose of making a shitter version of their own white people food. My advice would be to stick to originality and not bastardise traditional recipes.
