It's an english language thing, ESL-kun. The printing press changed the alphabet that English used from a hybrid runic-roman alphabet to a latin alphabet (which included letters the romans didn't use but were used by latin-derived languages). Anyway,
Ð, ð (eth) - got transliterated to "th"
Þ, þ (thorn) - also got transliterated to "th". Sometimes it is also transliterated as "Y" as in "Ye Olde Pub"
Æ, æ (ash) - got transliterated to "ae"
Œ, œ (ethel) - got transliterated to "oe"
Ȝ, ȝ (Yogh)- got transliterate to "ch" or "gh", and at some point the "gh" variant became silent.
Ƿ, ƿ (Wynn) - got translated to "uu" which was later turned into "W" (double-u, get it?) when that letter was added to the latin alphabet (the roman alphabet didn't have a "w" - or a "u" either, for that matter)

So now you know. Those letter pairs are a clumsy way of representing certain english letters without having to resort to unicode.
