protip: caramelise the onions before adding them to the quesadilla, it adds depth of flavor. I ribbon mine wafer thin so it only takes a minute or two personally. Could use a refire to melt the cheese fully as well

Quesadillas rule. I used to get a giant one for $2 from Pancheros when I was in college. They're like $10 now
