I guess? I've never actually had sage with anything but pork and poultry. It's part of my turkey seasoning for Thanksgiving, occasionally in my roast chicken seasoning (though I usually go rosemary) and I use whole leaves in chicken cacciatora and boar ragù.
Rosemary is my lamb go-to

I associate sage exclusively with the taste of breakfast sausage, and when it's in something else it makes it taste like breakfast sausage
