Well, you could make sage stuffing as part of a turkey dinner, but it's not really the season for that.

this a southern thing? there's a store near me that specializes in southern foods and they have cheap sage sausage sandwiches

Maybe, but I only suggested sage sausage because I know it's a thing and, from having made it, I know it uses a lot of rubbed sage.

I guess? I've never actually had sage with anything but pork and poultry. It's part of my turkey seasoning for Thanksgiving, occasionally in my roast chicken seasoning (though I usually go rosemary) and I use whole leaves in chicken cacciatora and boar ragù.
Rosemary is my lamb go-to

Are you going to Scarborough Fair?
Parsley, sage, rosemary, and thyme
Remember me to one who lives there
She once was a true love of mine
Tell her to make me a cambric shirt
(On the side of a hill, in the deep forest green)
Parsley, sage, rosemary, and thyme
(Tracing of sparrow on snow-crested ground)
Without no seams nor needle work
(Blankets and bedclothes the child of the mountain)
Then she'll be a true love of mine
(Sleeps unaware of the clarion call)
