How does one go about making homemade kettle chips? Seems like a long and arduous process. How many potatoes would I need? I use oil right?

I've had varying success using a pealer to make slices. Soak them in a plastic bag of water then dry and fry. I couldn't make them salt and vinegar without them being soggy though so I stopped bothering. Soaking them in vinegar instead of water did not work. Companies simulate vinegar flavor. Taste obviously varies greatly depending on oil used.
