I've done xanthum/water and xanthum/oil (coconut).
With a blender you need the oil, and to mix oil/xanthum first, otherwise it doesn't mix with water.
I find coconut by itself not great, and didn't find the xanthum/coconut mix better than just xanthum/water.

Yes, I always did xanthum/water w/o oil.
The xanthum will spoil, though. You will be able to smell it.

Made 10g per 125ml for my sodium polyacrylate powered lube .
