As first noted by GalaxyClub and spotted by others too, Samsung is removing several options from the Android recovery menu with the latest updates for Galaxy phones. Specifically, the update is removing:
Apply update from ADB
Apply update from SD card
Wipe cache partition
View recovery logs
Run graphics test
Run locale test
The only options remaining are “Reboot system now,” “Wipe data/factory reset,” and “Power off.”

This is not a surprise. The removed the OEM unlocking option in 16. I have an A9 tablet I use for flying and had to downgrade it to 15 in order to root the device so I could install adaway, and debloater to remove their fucking garbage bloat. Really wish any other android make would make a decent tablet to compete with the ipad mini.

Android tablets never had a chance compared to the iPad because of the striking difference between how their app distribution works.
Y'see, the iPad App Store will, by default, only show you apps made for iPads. You have to hit a toggle to show iPhone apps that'll run on iPads. Same applies to the Mac App Store. It'll only show you Mac apps unless you hit the toggle to show iPhone/iPad apps.
Google Play, on the other hand, just shows you everything. Phone apps, tablet apps, etc... all mashed together in lists and search results. It will happily let you install designed-for-phone apps on an Android tablet and let the user have a shit experience. Same applies to Chromebooks. They'll show you phone and tablet apps that run like shit on Chromebooks and let you install them without warning.

At least back on my old Galaxy S7 Edge, it would show system-modal dialogs asking if I wanted to update now, tonight, or later, and the later option would disappear after a couple uses. But I found that if I opened the notification shade and opened any app through a notification or the settings gear, it would cancel out the modal, and since neither now nor tonight had been tapped, it did neither.

Or you can use a version that doesn't call home, doesn't spy on you, can be saved to reinstall later, and can be installed on any os version or phone even if not officially listed or updated to work on that phone (by does). Google play store apps often won't even have a version for your phone once it is a few years old even if the current version would work fine it prevents installation by just being unavailable.

If I want root access, unlocking it is the easiest method. It's nice to debloat it on the device as well as being able to run adaway to block ads. That combined with afwall keeps apps off the internet that have no business accessing it.

What's the point of those options? Samsung has their download mode to load ROMs through Odin. You never use ADB sideload.
