I spend an embarrassing amount of time watching Youtube, but I hate Google so I want to find some alternative methods to watch videos.
I have tried freetube but run into too many API errors.
Does /g/ have any alternatives to the shit website that works consistently?

Mostly I watch on my computer. uBlock Origin eliminates all ads, never had a single issue using it, nothing has ever gotten through.

I have revanced on my phone. Only time I've had any issues was when I didn't update it for a long time.

On PC I use FF + uBO w/ custom YT filter-lists that fixes everything (removes 90% of the site just leaves videos). Also whenever I search I just use before:# or during:# to filter things out.
Never ecountered any issues such as buffering, AI slop, or straight up breakage, I do strictly just use my Subscriptions page only with every possible piece of history turned off.
I don't really watch YT on phone but if I for some reason do I just use Brave as it seems to be the best to bypass background play.

I really have to stop using youtube or make an extension that reconfigures its appearance or something. Its tendency to recommend things just makes me sick of the topic I'm researching. But this is partly bc I go on YouTube too much. But if I'm researching something, I don't want to see that topic spat back at me when I want entertainment. I guess I could use diff accounts or something

You could just private browse when you don't want a particular topic to pollute your algorithm. It's what I do.

I don't hate them at all.
I watch Youtube in Google Chrome Beta without using an adblocker. I have a dedicated TV above my main monitor I watch them full screen on @480p on a 1920x1080@60Hz Sharp from 2010 that is 3 1/2 feet away.
I use about 8 userscripts and a couple userstyles to make it my own, but that is about as froggy as I get.

I self host an invidious instance. Usually fine but it has a tendency to fail halfway through a video so if it's something I really want to watch I'll just yt-dlp the video then play it locally with mpv. But I only really use youtube for music now a days so it's not a big deal

No, the point is to be entertained and that is going to be different for everyone. Youtube does that better than anyone else on the WWW.
