The thing that really sucks is I'll preliminary draft out a pros cons, rough flowchart so we can have a direction but they always want the actual mockup and I swear minor shit will ALWAYS be a show stopper.

You can do quite a bit on Virtual machine. But if you are going to dual boot then it needs to be on a seperate drive since Windows loves to clear other OS's on it. But yes Linux commands is what people really want you to learn so Ubuntu is a good start, CentOS/Redhat is better and even better than that Linux server distro's like OpenSUSE within a home network or GNS3/Proxmox setup is better since you can learn what server admins have to learn.
Certs are obvious. Get Sec+. Learn A+/Net+ but don't bother taking unless you really need to pad that resume. Then you can specialize with various fields like networking with CCNA/CCNP, Server Admin RHEL/Cloud, or security, CEH/GIAC/CISSP. Skies the limit but if you really do go in depth and learn something you can always chuck it on the resume even if its something small like building a minecraft server / PC build.
