If Christianity isn’t Jewish, then why do they follow monotheism centered around the god of Israel? Why do they accept the Old Testament instead of throwing it in the trash?

Christianity is a subversion of the jewish spirit through platonism and caesarist legitimism. Jews hate Christianity, because it's the living proof that the goyim perfected their own culture, making Judaism obsolete.

Because they rejected Marcion and railroaded the religion towards Judaism. Then for the next 1900 years did whatever they could to slowly return back to what Marcion was doing anyways. All while leaving all the Judaism in it.

Because both Christianity and post-Temple Judaism are children of the same father: Second Temple Judaism. Following the death of Jesus (and a generation later, the destruction of the Second Temple), the two split and developed into what we know as modern Christianity and modern Judaism chiefly based on the acceptance or rejection, respectively, of Jesus Christ. This is the reason why Christianity retains the OT that shares many books with the Jewish canon, as during the period of the OT they were the same religion.
