This is my initial draft for a 3 week motorcycle tour around the Adriatic in september. I was initially going to take the ferry from Dubrovnik to Bari, but decided to leave from Durre so I can catch the bay of Kotor as well, though I don't know if it's worth passing through Albania or I should just turn around and go back to Dubrovnik.

If you have to choose between the two I'd choose Bologna, it’s bigger and and a prettier city overall. Aside from the historic sites I find Ravenna to be quite ugly to be honest. But if you’re really into Roman and Gothic history then Ravenna is a must see, as it was the capital of both Rome and the Ostrogoths and a lot of late antiquity buildings are still standing. There’s a lot of history there, the mausoleum of Theoderic the Great, the tomb of Galla Placida and the Justinian and Theodora mosaic in the Basilica of San Vitale.

Albania is worth it if you travel either to the beaches in the south or the alps in the north. Shkodër and Durrës are nice, but there's not much noteworthy between them. You can also take a ferry from Vlorë.

If you're in that area already, go up north to Predil/Predel pass and drive down the Soča valley to enjoy some nice driving roads. September is kinda high season but still should be a bit quieter than July/August. You won't need any vignette for that. Stop by Piran, it's worth to stroll around the city. You can get some amazing food at Fritolin.
In Croatia, go island hopping, it's really worth it imho. From Pula, you can go to Cres then to Krk and back to mainland via the Krk bridge for example. Also Split - Stari Grad on Hvar and then to Sućuraj-Drvenik ferry comes to mind.
In my opinion Albania is worth it if you visit Gjirokaster and Krujë. Krujë is closer to your route, while Gjirokaster is around 3-4 hour drive to the south.Stop by at Portiku in Durrës for some decent food. You have a cool Air Force and Army museum close to Tirana if you're into that sort of stuff. If you decide to go down to Gjirokaster, stop by at Taverna Mouzaki for delicious local food.

ive done a euro tour in 2022-23 on my dr650 from the states i can give you some cool roads to go on and places to see
i would go to Florence first then San Marino
then go to Perugia from there before Rome
what kind of bike are you using? there are some fantasic dirt/gravel mountan roads in albina and some of their tar roads you would honestly want a good suspension bike there are dips that are 4 feet in some places
you will need to get insurance off the boat in Albania when you go from Bari

oh my bad you are going from Albania to Bari you still will probs need special insurance when you enter anyways it wasn't expensive

Albania mostly just to get to the ferry, so thinking it may be better to go back to Dubrovnik instead.

Was gonna rent a motorcycle in Rome, probably a BMW G310. You shipped your bike from the states? How much did that cost?

Cool, would you say the dolomites is worth skipping for more time in Albania?

Depends on what you like really. If you like the mountains, definitely do not skip the Dolomites. If you like more of a rodeo, then stay more time in Albania. Albania can have some pretty rough roads here and there.
