Looking back, these movies were incredibly held back by their time. It's only amazing if you have never read the books or are an NPC who goes "OH MY HECK THAT'S SO HECKIN EPIC!! I LOVE FANTASY!". They're shitty, half-measure adaptations. Like all fantasy/sci-fi etc., LotR could only work in 2D or 3D animation.

Because they needed contrast to first movie and Shire and show a kingdom in decline through colors. So everything is autumn, Pelennor Fields are literally described as "flaming green" when Theoden leads the charge.

Movies are great but there are also a LOT of choices by Jackson that are just hack-tier.

Because Saruman betrayal tipped the scales too much in Sauron's favor so the Valar sent Gandalf/Olorin back after he died as "White" (Saruman role of the leader of the wizards) with a power boost to help the people of Middle Earth, but he still could not intervene too much.

Which is why Jackson is a hack for having a Witch King break his staff. In reality, Gandalf would have mopped the floor with him.
