Beyond any plot/logic related reasons, one of the main reason why I dislike Noelle Knight is simply that it's making a single character too important. Noelle is already a main character, a party member(even if temporary and only on certain occasions), she's most likely a key part of the prophecy even if it hasn't been stated outright, she probably has a connection to Friend and might have created it, she's probably the most important character in the Weird route. Now you also want to make her the Knight too? It's just too much for one character in my opinion, it feels overwhelming.

Yes, my theory regarding this is that Noelle was actually meant to be the second hero, with Susie being the girl, Noelle can equip swords, and is a girl, the panel of the second hero seems to show a figure wielding a sword. The girl, originally, was meant to be Susie, we can see the symbol on the carpet in Susie's room, and if I remember correctly, in the code, this particular symbol has "rude buster" in its name. My theory is that the roles were swapped.

Noelle has repressed feelings for Kris that resurface after Snowgrave, specifically after Kris comforted her off-screen the night between Chapter 2 and Chapter 4.
Noelle could tell that there's something wrong with Kris, but she obviously can't really comprehend that her friend has been possessed by a demon. She definitely recognizes that YOUR voice isn't Kris's voice, but she doesn't really have time to process what's going on while she's terrified and panicking.
The most relevant part of the couch scene here is that when Noelle realizes You are reading her mind, she actually stops trembling for a second and tests you by giving you prompts. She's still terrified, but this shows that there's a part of her that's curious about You.

It's really anyone's guess how this plays out in Chapter 5, the "thank you" scene and Noelle apparently indicating to Carol that she still wants to go to the Festival with Kris make it seem like she's somehow into it, but we just don't know. Nobody really predicted that post-Snowgrave Noelle would basically just shift her crush from Susie to Kris.

It's way more complicated with Noelle. In Snowgrave, on one hand he's had extreme reactions to what we've made him do to Noelle (going maximum deredere post-CH2 in their offscreen meeting to comfort her, then his post-"rape" flipout against us) proving he at bare minimum cares about her wellbeing on the level of a friendly acquaintance with moral standards, possibly more (we don't know whether Kris "ghosting" Noelle is an emotional decision or a "rational" one, possibly even contrary to his own feelings towards her). But on the other, ERAM accuses him of "enjoying Snowgrave". It could just be a villainous taunt that's plainly false. It could be general latent sadism that we've simply happened to point at Noelle. It could be some repressed hostility towards her for what happened in the Dess incident. Or perhaps Kris does have actual feelings for Noelle (intentionally or unintentionally repressed on his part) that we're taking advantage of to tempt him into doing the Snowgrave business.

People started calling it "ERAM" after the name of the track that plays before its boss fight.
"ERAM" probably comes from "MARE," as in "NIGHTMARE." The boss and the Zelda segments as a whole heavily reference Link's Awakening, a Zelda game set in a dream world where all the bosses are nightmares. The "song" itself seems to be a short looping sample of the "Your Best Friend"/"Your Best Nightmare" motif from Undertale, which is also used in "BIT ROOTS" in the third dungeon in the Mantle Game and in "Digital Roots" in Queen's basement in Chapter 2 (probably leading up to a true version of "ROOTS" in a future Chapter). And "ERAM" -> "MARE" obviously complements The Knight fight at the end of the Chapter (KNIGHT-MARE) which the Shadow Mantle is intended for.

As for who/what it actually is, I believe that this entity is actually "FRIEND," the creepy disembodied smile/cat-thing with pink-and-yellow eyes. I believe it is the supernatural entity referred to as the "TAIL OF HELL" in The Prophecy and has direct personal history with Kris, which is why it knows so much about Kris and both torments them and aids them by giving them the Shadow Mantle.
