The video games you gave as an example had a finished story designed before release.
Manga is extended when it's successful and most of the time the author just runs out of ideas or just gets burned out.
You can see this in live service games too like FFXIV where the story was good but became shit as it had to be dragged out.

Those are only the bad ones. You can't write a story without more or less having the ending planned out. Even Tolkien already knew how lord of the rings was going to end very early on when it was a little more than hobbit 2. Lovecraft too, he usually started from the ending and worked back from there.
FMA has a good ending which is the logical extreme of shit that was introduced on the very early chapters, and every character gets a proper ending that makes sense both logically and according to the philosophy of that world.
Also, japs have a fetish of humiliating their main characters at the end and making them wagecucks for some fucking reason, FGO did the same shit, despite Nasu writing Shirou attending magic school, being a cool dude, and eating Tousaka ass every night in some endings, how did he devolve so much.
