I'm currently playing a semi-canonical Red in FireRed. Since it's difficult to get all three starters, I'm basing it primarily on his team in Let's Go! Pikachu/Eevee, starting with Bulbasaur.

Pixiv Red is just a fun interpretation, desu. The idea that the plucky young kid you played as in gen 1 grew into a cool and handsome (in the Japanese sense, not a western one) teen boy in the intervening years between gens 1 and 2, or maybe some indefinite fanfiction timeskip after that, is naturally attractive. It's not surprising that official media eventually went in a slightly different direction with depicting Red in his inevitable further canon appearances, but the image of finding him atop a remote mountain in GSC and him wordlessly initiating a battle with the new player kid is a powerful image that understandably fueled fanart for years.

There could be a number of different things you mean by that. Demifiend is another kinda cool-looking urban teen boy that becomes increasingly empowered both during his game of origin and in the mythos built by the fans and the official canon of his franchise over the years, but the inspirations that the characters are building off of are different and Demifiend is definitely built to look like coolest motherfucker from the get-go with the ridiculous abilities he gets access to during the game and the general concept of him being a fusion of man and demonic power. Writing another post because I have further thoughts about this, but I think it's also worth considering the contexts these characters inhabit. SMT stories often deal with fears of the apocalypse (the real world kind of fear of the 20th century being nuclear war, obviously, which gets very literal representation in SMT alongside the more fanciful supernatural kind). The vibe of the games is the heroes dealing with massive life-derailing events outside of their own control and finding some sort of resolution at the end of it all through their choices. I feel SMT3 really is kind of pulling in two directions with how the protagonist is unwillingly converted into a half-demon who is further disqualified from doing anything that matters in the eyes of the divine unlike actual humans, but also presenting him as a badass power fantasy who everyone wants on their side (which is why it makes sense that the extra ending added in the rerelease where you help Lucifer rebel against the Great Will is often seen as the canon one, saying "fuck you" to the representative of God is pretty cool even if you're still working for one of the agents of the current order of law vs. chaos).
Pokemon stories are built on the appeal of the call of adventure, of seeing the world and learning about it, both through studying it (the Pokemon) and meeting other people who tell you about things you did not know, who challenge you and your views or support you, of mastering your environment. Becoming the literal Pokemon Master. Post-RGBY Red is cool for embodying that mastery. IRL, people have differing ideas of how said mastery would manifest in their habitus, which leads to different interpretations of Red as a character, working off the semi-blank slate of the gen 1 PC.

Probably not. A lot of Sugimori's Red art depicts him being happy or having fun as the whole reason Red becomes champion is that he loves his Pokemon and has fun being a trainer. I personally think the SS Anne line was purely poking fun that he doesn't have dialogue and not that he literally doesn't speak, which that kind of jab at silent protagonists isn't unusual in RPGs.

Not the guy you're replying to but it was less Red's inclusion in SM and more Mina's inclusion in LGPE where things get confusing. As we know from Gen 7's lore, you can be a Trial Captain up until age 20. After that point you lose eligibility, meaning that Mina is at maximum 19 in SM/USUM. Her appearance in LGPE is that of a younger kid, but according to Bulbapedia, she's anywhere from 13 to 15 in that game, meaning at most 6 years passed and at least 4 years. That's assuming she's as old as a Trial Captain can be in her SM/USUM appearances. Red on the other hand looks exactly like he does in RBY, as does Blue. In those games they were both 11 years old, so at maximum, using Mina's age difference between games as the metric here, Red should only be 17 in Sun and Moon assuming Mina is the oldest a trial captain can be in SM and the youngest of her possible age range in LGPE, Mina could realistically be 16 in SM and 15 in LGPE making Red 12 at the youngest in SM just by looking at Mina's age which would make him younger than he is in GSC (14). Red and Blue though are very clearly grown adults in those games though, likely being in their early 30s if you just add 20 to their ages from RBY since SM was the 20th anniversary game. LGPE was just a super poorly thought out slop game that kinda ruined the timeline
