If you shoot them out of the air you can get a free shot while they're lying stunned on the ground. Usually when you knock one down they have i-frames on the floor and immediately get back up. It also makes a huge splash of blood with the shotgun. I thought I blew its head off the first time I shot one lying down.
Another quirk is that they won't do anything but chase you and do the low slash as long as you don't attack them. They only start jumping and using their decapitation attack once you shoot or stab them.

And you can exploit this because they're left handed, so they'll always miss if you run to their right
