It’s because of the music, the fun dialogue and bantz, the cool sci-fi setting, the fact that you could also play them via couch co-op (sadly that was removed by Halo 5 to keep a 60FPS target I assume), the fact that the enemy AI difficulty is actually really good on higher difficulties instead of just giving you low HP, and it’s because there were tools to record your playthroughs and really get Machinima going. It’s why compared to MS’s other IPs, Halo still is respected in spite of 343’s messy handling.

They are solid singleplayer FPS campaigns for the most part that by and large defined/refined a lot of the conventions for console shooter mechanics and storytelling in a similar way that half life did. You really didn't have the kind of storytelling/set pieces/cutscenes in FPS games that you do in those games before they landed, definitely not as well established as they became afterwards.
Halo definitely became more well known for the console multiplayer experience of that era as things like xbox live really took off but the campaigns, at least up until/after 3, were quite well regarded and considered selling points alongside the multiplayer.

I still think there's just a ton of character and love put into the world from back then and they have a lot of cool ideas.
