When you say this, does it have to be a concluded story where they are a confirmed couple? Or can it be ongoing where its implied they'll end up together or there is romantic interest between them?

Most of the stories that came to mind for your request aren't anime. Some are manga, some are "manga-esque" comics from other countries.

Maybe I don't watch enough anime, but I'm drawing a blank on any anime that actually seems like a good fit for the requirements.

The Hellsing Ultimate OVAs came to mind. It's quite entertaining and has a couple that literally meets the requirement of "weaker guy ends up with stronger girl", but it might not be precisely what you were looking for. Sure, he's got long hair, but I don't think he counts as a twink. He's taller than the girl he ends up with. He's weaker than her because he's human and she's a vampire.
It's quite famous, so you may have already heard of it or watched it. It's about a group of british vampire hunters called Hellsing. The protagonists are all working for that group.

It's a relatively generic isekai fantasy setting. The mc is a twink, and he's usually surrounded with larger and stronger women. (as shown on this cover) The thing is that there's no confirmed couples up to where I read. Some of them are his bodyguards.

It's not slice of life, but the conflict isn't really that serious. It's basically about a short guy traveling to a bunch of different places with hot women.

I haven't read this one in a while, so I don't remember much of the plot. But it fits your requirements pretty well.

The green haired blacksmith and the blonde prince are the romantic interests of eachother. You can see them on the cover. She's definitely much stronger than him (as hinted at by the giant hammer she drags around).

This one might be more tenous because of the art style. Apparently this started as a animal crossing fancomic.
Anyways, If you are fine with chibi designs or furry stuff, here's another comic.. There are human(?) characters, but the 2 characters in question aren't human. "twink/weaker guy ends up with a dominant and/or stronger girl" perfectly describes their relationship.
