How would I go about recreating a similar look? Like the filters and compositing? He uses blender for these but doesn't explain the lighting/compositing set up in his breakdown

You can grab something like this which is basically drop-in https://github.com/chfoo/blender-vhs-filter

And you can examine how it's put together by opening the compositing group if you wanna learn how it's done.
