I fucking love dumplings man, bursting with flavour, bitesized, highly customizable, able to do in bulk to freeze for later. Only minus is that it's messy and time consuming to do, but on the other hand that just raises the skill ceiling to make them presentable.
Why did sushi become the go to chingchong banzai master memefood when dumplings exist? Is is because every country has their own meat in dough?

If you are trying to make a logical point, you failed at it.
Japanese dumplings are gyoza. They feature a thicker wrapper, and therefore less difficulty. They also are prepared in advance, not to order.
Sushi in restaurants that are not actually Japanese are simply capitalism at work. Do what draws in your patrons. If you have a good eye, you'll see all kinds of restaurants have a hint on the menus as to the ethnicity of their cooks, and their clientele, no matter what banner the restaurant ascribes too. It might be vietnamese items on a chinese menu, for instance. It could be regional chinese items on a mostly hong kong-american chinese style. Fish maw soup or salt and pepper eggplant. Plaintains on chinese takeout in Miami is common. French fries are not.

Love dumplings too, but I have no intention of ever making them at home.
Love the thin-skinned Fuzhou-style ones that I get in Chinatown. Top them with some of the housemade chili sauce and you're good to go.

Favourite dumpling would have to be the Shanghai soup dumpling filled with meat and broth, traditionally eaten by biting a corner and sipping the broth.
