Had the tumor removed Monday and am back home already.
I feel like I got a 2nd chance at life.
What kind of food would you eat in my position?

As trashy as it is to say this, taco bell. Taco Bell is always my go to comfort meal, it was a big part of my childhood and teenage years.
I slipped on my concrete steps leaving for work last week, fell eight feet straight down and landed right on my left ass cheek, which is still entirely one gnarly bruise. I keep thinking about how if I'd hit my head, I wouldn't even be here, responding to silly threads on 4chan. Ironically, every time I almost die, instead of living life to the fullest or whatever, I just get some taco bell and go full shut in mode for as long as possible. Maybe this is living life to the fullest, for me. Working, going home, spending time with my son and dicking around on the internet while eating trash. I never get the urge to like, go skydiving or whatever other people seem to do.

Personally I'd eat hella pastries and seafood.
I went through a much less fatal health problem, I think I know the feeling with regard to food at least. I was on an extremely restricted diet, ended up 20lbs underweight within a 6 month timeframe.
I got a different donut every workday for 3 weeks.
I went back to my favorite restaurants, tried the new ones that popped up.
I always primarily ate whole foods at home so I kept doing that but with expanded options.

I suddenly could not read text off a screen and I had a really hard time reciting credit carb numbers over the phone, weird stuff like that.
I just randomly went to the ER and the dr treated me like I was nuts till she saw my catscan of my head.

You're lucky not to live in a socialized-medicine country. I went in to the ER after a stroke, the incompetent quack didn't give me a diagnosis, refused to do an MRI because I "didn't qualify" despite my obvious stroke symptoms, and he made an appointment for a neurologist ten days later. Neurologist literally laughed at me, did nothing, told me I didn't qualify for an MRI to try to find out what was wrong, and said that if I wanted to pay for it privately it would cost the equivalent of EUR1300 and I would have to wait three months for an open slot.
I flew to Thailand the next day, saw a neurologist the morning after I arrived (11pm arrival time, if I'd arrived during daylight I could have seen one immediately) at 10am, and was stuffed into an MRI tube at 4:45pm. He told me the next morning it had been a stroke, that I was lucky not to be worse impaired, and that because of the two weeks of delay between occurrence and his diagnosis there was nothing that could be done. If the incompetent quack at the socialized-medicine-country's ER had done something about it immediately, I might have been ok.

Me >>21910495 again. To answer your question, I would suggest two things:
1) food-wise, treat yourself to something fancy in celebration. I'd probably head for a Ruth's Chris steakhouse or a fancy fish place.
2) if you notice any problems, think about maybe trying psilocybin mushrooms. They have an immediate "reset" effect on the brain and increase neuroplasticity. See:
